烤鴨，作為中華傳統烹飪與台灣在地美食文化的瑰寶，一向深受饕客喜愛。然而，「好馬配好鞍，好鴨配好刀」，一隻完美的烤鴨，除了講究火候與醃料，「片鴨師傅」的手藝更是決定老饕入口體驗的靈魂關鍵。厚薄度是否均勻、皮肉分離的精準度、汁水鎖住的功力，乃至於擺盤的視覺美感，無一不考驗著師傅數年磨一劍的硬實力。
近年來，隨著餐飲市場競爭激烈與精緻化轉型，許多隱藏在民間、飯店、黃昏市場或一隻兩吃路邊名店的片鴨職人，默默耕耘卻缺少一個發光發熱的舞台。
為了發掘全台最具匠心、刀工最俐落的「片鴨之神」，並響應大眾對烤鴨文化的熱愛，我們決定打破門派與地域限制，舉辦首屆「全國片鴨大賽」。這不僅是一場屬於職人間的頂尖對決，更是一場將傳統餐飲技藝推向精緻化、娛樂化與國際化的年度美食盛事。
職人精神的傳承與加冕： 為全台餐飲業的片鴨師傅、主廚及新秀提供一個國家級的技術交流競技舞台，透過實戰競賽，肯定「刀工職人」的專業價值與社會地位。
帶動烤鴨產業升級與經濟效益： 藉由賽事的媒體曝光與網路話題，協助參賽店家提升品牌知名度，吸引大眾消費，進而帶動全台烤鴨與禽肉養殖（如宜蘭櫻桃鴨、在地土番鴨）相關產業鏈的經濟活絡。
深化台灣美食文化標籤： 將「片鴨技藝」從廚房幕後推向螢幕幕前，結合現代美學與創意擺盤，讓傳統美食煥發新意，打造最具指標性的台灣年度美食文化IP。
促進產學合作與人才培育： 邀請餐飲院校學生參與或觀摩，激發年輕一代對傳統中式刀工與烹飪技藝的興趣，為餐飲產業注入創新活水。
